Why did the hostess use "over" there? What does that mean?

a. ... check out the tips we have over on our YouTube channel.
b. ... check out the tips we have on our YouTube channel. [my version]

What is the difference in meaning between them?

"Over" carries a nuance; it tells you that the tips are out there on the channel. You can think of it as the speaker figuratively pointing at the channel if you like.

Your version is possible too.

So, "over" here has the same meaning as "over" in "go over there", right?
