I know that wind up means end up but in this sentence it really confuses me

In the days before battery-operated/digital watches, they used to run mechanically. There was a small knob on the side of the watch which we had to pull out and then turn a few times to make the watch continue to work. If you didn't do it often enough, the watch would stop. If that happened, you had to reset the hands using a different knob, and then follow the procedure I explained before.

The process of turning that knob several times is "to wind up a watch".

Ha ha!! Yes, I suppose you're right, although you can wind up a watch before it has stopped so you're not necessarily starting it, you're just making sure it doesn't stop!
