Hello.
I don't know what chops here means in this context.
Please help! Thank you.

I was in the hospital for nine days.
I'd just put new seedlings into tubes and I don't think Dad
looked at them the whole time I was gone.
The whole lot dead as last night's chops.

a small piece of meat with a bone still in it

Chops are a cut of meat.
"last night's chops" are the chops you had for dinner last night.
If something is as "dead as last night's chops" it has been, metaphorically, slaughtered, cut up, eaten and digested. It's very dead!
 
There's a verb missing, though, to make it a complete sentence- The whole lot were as dead...
