I know "a coffee" is correct.

But could I just say " coffee", since coffee is sometimes uncountable?

I believe that just "coffee" or "some coffee" would be more commonly heard in AmE.

Have you got time for a cup of coffee after work?
Have you got time for (some) coffee after work?


That's what I would say.
I wouldn't say:
Give me a water.
or
Give me a coffee.
 
I would say that it's more common with "a" in BrE.

Shall we go for a beer after work?
I'm meeting my sister for a coffee on Saturday.
I really fancy going for a drink later.

It goes without saying that those don't necessarily mean we will go and drink one beer, one coffee, one drink etc. It's just how the phrase works.
