Which one is correct?

Cow meat
or
Cow's meat

For example:
I love cow's meat.
I love cow meat.

Thanks for answering but what if we say "deer" instead of "cow"?

I mean,

I love deer meat.
I love deer's meat.

What if there is no word to mean a meat of a specific animal?

I suggest you Google "[name of animal] meat" and see how long it takes you to find one that doesn't have a name. Obviously, this only applies to animals which are generally eaten. I am not suggesting that you will find a word for the flesh of an elephant when used as a foodstuff.

One you could use is "goat meat". I would not use the possessive form (goat's).

You could but in BrE, that's "mutton".

Not in the US as afar as I know. At least I have never heard it called "mutton".

As an American, I would have said that "mutton" was sheep and only sheep, not goat. But then, I don't eat goat meat.

How would you differentiate sheep from goat if you just said "mutton" in the UK?

I think I just saw on Wikipedia that in the US it might be called "chevon", but I don't know if that's regional.

In the UK, we tend to refer to any meat from a lamb/sheep as "lamb". Technically, it refers only to the meat from a baby sheep, but most Brits don't differentiate.

We have venison here. It is served in some very fancy restaurants.

How would you differentiate sheep from goat if you just said "mutton" in the UK?

I disagree a bit with some of the BrE answers here. I use mutton for meat from an adult sheep, and goat for meat from a goat. I think the mutton for both is more South Asian. I have never heard it used that way in the UK, though others may have. And lamb is only meat from the baby sheep for me.
