If I have a date range like 1/1/18, 2/10/18, 3?12/18, 5/11/18 etc and I have to give these dates to someone then can I say "I have dates that include months January through May"?
 
You've named a set of dates, not a date range. In American English a date range is something like January 1st through May 31st, 2018. It specifies the first and last dates for which items will be included in a set.

You could describe the set in post #1 as dates in January through May of 2018.
 
I hope you noticed that Piscean took 5/11/18 to be a date in November and GoesStation took it to be a date in May. You need to be aware that when we use numbers to denote whole dates, AmE and BrE use reverse orders for the day and the month.

10 February = 10/2 (BrE) and 2/10 (AmE)
6/7 = 6th July (BrE) and 7th June (AmE)

They play it safe in Canada by using both systems, though when I lived there, the logical day/month/year system was preferred.

You can, but the person you're talking to will wonder "Dates with whom? What kind of dates?"

If you have a set of forms in front of you, dated between January 1st and May 31st, you can say These forms' dates range from January to May.
