"The maid had run screaming" I want to know if screaming is an adverb

I agree with you that "screaming" in your sentence functions adverbially.
I wouldn't call it an adverb.

Please pay more attention to your punctuation next time - a period/full stop, comma, etc.

('The maid had run screaming' would have been a better title.)

1. The maid ran fast. Here, "fast" is an adverb modifying the verb "ran"
2. The maid ran screaming. Here, "screaming" (the "-ing form"/ the present participle of "scream") functions in the same way as "fast". So, it functions adverbially.

The "-ing form"/ the present participle can function like an adverb.

My advice for you would be: Use English as much as you can!
You forget it because you don't use it.

Have the French dropped capitalisation since I learnt it at school?

The French do not capitalise the first letter of the names of languages. "Je parle anglais, français et un petit peu irlandais."
