How do you describe the way to turn the water on? Do you say push the lever?
 
Levers can be either pushed or pulled. I prefer turn the lever.

Doesn't that imply that they can be pushed, pulled, or turned, at minimum?
 
I'd say squeeze​ the lever.
 
How about "switch on"?
 
You can switch on a tap where I come from. That applies mostly to the ones that require a rotary movement. In any case, you can switch on/off the bath, the shower, the mains water.
