I'm a little bit confused by the word "stuff" here. It's difficult to understand. It basically means material, matter, article. In football context, I guess it means play - end to end play. Is it correct?

End to end stuff as both teams give the ball away and counter on each other. Chelsea looking to find Havertz aerially with several crosses while Everton try and find Gordon down the sides.
 
"Stuff" is one of those useful words that can be used to mean just about anything. Here, you're right - it means that the ball travelled up and down the pitch. The advantage and possession of the ball repeatedly passed from one team to the other.

Could I also use "thing" there?

From one end to the other. When a player kicks the ball in the direction of his/her own goalkeeper, the ball's travelling down the pitch. When they kick it in the direction of the opposition's goalkeeper (so they're attacking), the ball's travelling up the pitch. Of course, in end-to-end play, loads of players are kicking the ball all over the place so it's not important to think too much about the direction of travel. All we need to know is that the ball regularly went from one end of the pitch to the other.
