Sue and Alan had been dating for many years. Every weekend they went to a movie together on Saturday night. On Sundays they went to the beach in the summer and to the country in the winter.

In the second sentence, I think the definite article “the” is omitted before “Saturday night”. Am I right?
 
It's OK with or without 'the'.
 
In that sentence, I would never say "on the Saturday night." They didn't go on the Saturday night. They went to a movie together on Saturday night.

Or just: They went to a movie together Saturday night.

Or even: They went to a movie Saturday night.

But not THE Saturday night!
 
I see no need for "Every weekend ...". We know which two days make up a weekend. I'd use "Every Saturday night, they went to the movies. Every Sunday in summer, they went to the beach, and in winter, to the countryside."
