Is it true that "I am amazed to see him at the party every week" is incorrect (it should be "amazed at meeting") because when we use an infinitive after a verbal adjective, it should refer to ONE specific event,
"I was amazed to meet him at the party yesterday".

The word "surprised" probably works better than "amazed"; but does either one work with "every week"? (No.)

Unless he's like a magician or something doing tricks. Then one could be amazed every week.

Where did you get this idea from? Which book? Which author?
Then I am confused when to use ing or an infinitive after a verbal adjective.

Try:

I am confused about whether to use "ing" or an infinitive after a verbal adjective.

I wonder if I'm supposed to know what a verbal adjective is. 🤔

To me verbal adjectives are adjectives that are formed similar to verbs (broken, amazed).
