Which one is correct?

1- Everyone but John in our family avoids eating liver.
2- Everyone in our family avoids eating liver but John.

The second one is more natural.
 
You can also say Everyone in our family but John avoids eating liver.
 
I'd suggest these:

In our family, nobody but John eats liver.
In our family, everyone but John avoids eating liver.
 
Or:

John is the only one in our family who eats liver.

Or:

Nobody else eats liver, but John is happy to eat liver.
 
I much prefer "except" to "but" which has other meanings.
