It started in 2003 when smalltown lad Edgar Sia II, then a 26-year-old college dropout, grabbed a tiny spot in the parking lot of a mall, the site of an upcoming food hall. As a frequent customer of McDonald's and KFC, Sia knew what he'd been missing in the fast-food scene: Filipino-style street fare served in a restaurant-type setting.

Note that 'fare' is particularly appropriate in the contrast with McDonald. "Fare' usually collocates with 'peasant/honest/unassuming/uncomplicated/simple/homely...' - words like that.

I did a search on BNC. Apart from cases where 'fare' obviously means 'payment for travel'. and one 'usually fare'* in which 'fare' means 'do' or 'get on' (compare 'wayfarer', 'seafarer'. 'farewell', German fahren, and so on), the first 50 (all the hits numbering more than one) will give you an idea of suitable collocations.

PS* This was no. 51. I see 45 is a similar case, and there may be others. If I was cleverer with my search criteria I could no doubt iron out these wrinkles. :oops:
