Five Star hotel

we say five star hotel and not five stars hotel..
Star is written singular although it is not singular but plural ( Five).
could some post me the reason.

In "a five star hotel" five star is an adjective describing the class of hotel, in English adjectives are never plural. You could say "a hotel with five stars".
