Which is correct?

I love Westerns and this movie is a full blown Western. Having said that, though, I find it difficult to like the movie.

OR

I love Westerns and this movie is a full blown Western. That having been said, I find it difficult to like the movie.

The first one is better. The second is not wrong, but I find it less natural.

Yes, that variation works too.

(By the way, I'd hyphenate full-blown.)
