Perhaps:

Of all the senses, the sense of hearing is the most developed at birth. It's also the last we lose.

But it's not acquired at birth.

Babies can hear long before they are born.

Given that many people become deaf as they grow older, I'd say it was one of the first faculties we lose.

I think the original is trying to get at the fact that most medical professionals believe that, even when a person is in the final stages of dying, they can still hear what's going on around them. It's supposedly the last sense to go before death.
