Song lyrics don't always make sense. In this case, "knife" rhymes with "wife" so was a useful last word for the line. I've heard of people being left "holding the baby" but "holding the knife" is not an idiom as far as I know. It's possible that the mistress is very upset that the man has gone back to his wife and so she now has a knife in her hand, as a threat to the man.

Hi,

I can only think of this: they are having dinner in a romantic restaurant (it's a summer affair, i.e. the beginning of a relationship, even if it is to be short-lived) . At a certain point, probably during the main course, the man just gets up and "runs back to his wife", so the girl is literally left "holding the knife" (that's right before she drops o it to the table/floor in disbelief and despair and starts:bad-word
