One of my students wrote:

I like wind.

It sounds very much like saying "I like nature." or "I like water." So it seems to me that it's grammatically correct.
Should it be "I like the wind"?

It's grammatical. "I like the wind" sound better. "I like wind" could mean "I like flatulence and bloating", but I'm sure the context would clarify it.
