Which are OK?
1 I don’t see why his words can’t be interpreted in a way that Jack wasn’t against going there.
2 I don’t see why his words can’t be interpreted in such a way that Jack wasn’t against going there.
3 I don’t see why his words can’t be interpreted differently meaning that Jack wasn’t against going there.
4 I don’t see why his words can’t be interpreted as to mean that Jack wasn’t against going there.

I would replace 'interpreted as to mean' with 'taken to mean'.
