Which are OK?
1 I don’t see why his words can’t be interpreted in a way that Jack wasn’t against going there.
2 I don’t see why his words can’t be interpreted in such a way that Jack wasn’t against going there.
3 I don’t see why his words can’t be interpreted differently meaning that Jack wasn’t against going there.
4 I don’t see why his words can’t be interpreted as to mean that Jack wasn’t against going there.

Are there other ways to convey the same idea?

What about my original sentences? Are some of them OK? Which ones, if yes?
 
They all look wrong to me, but I'm having trouble getting my head round all those negatives.

I would replace 'interpreted as to mean' with 'taken to mean'.
