Is the usage of “in today’s one” here correct?
 
No.

“Welcome back to another video. Today we'll be discussing politics.”
 
It would have been possible to use "Welcome to another daily video. In today's, we will be discussing politics".

In the original, the speaker could have used "In today's video, ..." but the repetition of "video" would have been awkward. "In today's one" is wrong.
