Can either verb be used in my sentence?

"More and more universities are adding/including computer science."
 
Do you mean they are starting new departments or new degree-granting programs?

Then, they are "adding" them.
 
Can either verb be used in my sentence?

"More and more universities are adding/including computer science as a major field of study."
Suggestion. And "adding" or "including" would work.
 
I'd say they're offering/providing courses in computer science.
