Dears,
For the sentence: "It is familiar for my friends to go fishing" , which is correct to say: "My friends are used to going fishing" or "My friends are used to go fishing" ?

Thank you

Nobody uses the address "Dears". There is no need for an address.

The first sentence is strange. What is familiar to who?
The second sentence using a gerund is correct, not the third.

How about:

My friends often/regularly/frequently go fishing.

Nobody uses the address "Dears".
We get that a lot from Indian English speakers, but you're right about no salutation being needed.
