Are you simply asking about the difference based on "in" or "on", or are you asking if you can reverse the first two words of the question (as you have done)?

I would use "in the contract". "On" is not wrong, though, in my opinion.
 
I would only use "in".
 
With "name", I would use "in". If you use "signature", I would use "on".

I would say that the contract itself is a thing. What it contains is "in" it. The signature is not part of the contract per se. It is a way of approving what comes before it. In that sense, the signature is not a part of the contract. So one puts their signature on a contract to approve what is in the contract. Does that help?
