I am sure I will be a good writer soon. It is really helping.

Generally speaking, monk has many good qualities, holy, spiritual, discipline, innocent... etc.
But I am choosing a perspective that takes side of physical/material world and going against spiritual world. It is a fight between them. I hope this helps.
I feel like the more I explain, the more people get confused. Should I just stick to Butcher and Monk Productions? But it becomes so general. Do you agree?

As everyone above has said, none of your choices is wrong, but the first (with an s) is most likely, simply because it's the most concise.

One more note: If the full name is Butcher and Monk Productions, you can refer to one Butcher and Monk film, singular, as a Butcher and Monk production, singular.

Notice that when you use the article a, production should have a small p.

They are symbols, ying and yang. Violence and non-violence. They are opposite. And I am in favor of the butcher. For me the butcher represents reality, struggle. It's raw, honest, aggressive, and passionate toward the life. On the contrary, the monk for me is non-violence but passive, lost, unknown, and undecided, and waiting for divine intervention.

Interesting! The yin and yang remind us that both are necessary: darkness and light, pain and pleasure, life and death. We can't have one without the other. It's the eternal balance.

I am trying to emphasize my meaning toward these names. I hope my grammar is mostly correct.

I like the ying and yang balanced world you mentioned. However, my personal belief is that if anything is perfectly balanced, it will be motionless, lifeless. In order for the wheel of life to spin, for the life to continue, it needs resilient force to move forward to achieve constant movement, like our planets such as sun, earth, moon, etc.

I didn't like it when it was first proposed in a question about using articles because surnames can't take articles. It didn't occur to me to read "Butcher" and "Monk" as a profession and an avocation. I think "The Butcher and the Monk Production Company" somehow reduces the potential for confusion, though I can't say why.

I can honestly say that I don't think I've ever spent more than a couple of seconds wondering why a company is called what it is, regardless of what it does or what it's called. The important thing here is that, if it's going to be a TV/film production company, the word "Productions" appears in it. Other than that, you can call it anything you like. And I mean anything! How about "Decanter and Wheelbarrow Productions"? (I randomly chose two nouns.)

In general, I agree about children's names although these days (in the UK, at least) just about anything goes.
