Which ones do you consider correct?

"Maybe one of his men know."
"Maybe one of his men knows."

"Italy win the game."
"Italy wins the game."

"Each one of them know what they are doing."
"Each one of them knows what they are doing."

I also need a link to anything that could provide me with some more information about the singular and plural usage in English. For example when we talk about a team, we may see them as one unit or as individuals.

"The team are at the table."
"The team is at the table."
 
I would use the singular in all three cases. "The team" could go both ways, depending on whether it is taken as a single group (AmE) or many individuals (BrE).

Mind you, plenty of native speakers will use know what they are doing.
