Should it be "lines up"?

If "line up" here was a noun, I think that it would be "line-up" and that it would need "the" at the beginning because "line-up" is countable.

What do you think?

The 'them' makes me think that 'ice cream' should be plural and that 'line' is a verb.

I doubt whether any of the people reading that guff wll worry too much about this.

If you want to keep "ice cream", you need to follow it with "lines up" and "Don't let it distract you".
If you want to use "ice creams", you need to follow it with "line up" and "Don't let them distract you".

I don't find the use of the uncountable "ice cream" there natural.
