When "your throat aches", how does it hurt? The pain here seems to mean that he is so moved that he can't even talk.

There's no suggestion that he was moved by the pain. He was moved by the remembering, which caused his throat to ache.

The phrase is "to choke up" in BrE. I don't know if "to chock up" exists in another variant.

When you are "choked up", you are on the verge of crying. Usually, when you feel like crying but you are trying to stop yourself, it actually makes your throat hurt. You have that feeling that if you open your mouth to speak, your voice will crack or be very thick with emotion.
