Can you say "Not my type at all, but this song is great!" to mean that you don't usually listen to that genre of music, but that particular piece actually appeals to you?

I don't think so. 'Not my type' is used a lot more frequently when referring to people:
You wouldn't like him. He's not your type at all.

Not my favorite genre, but this song is great.
I'm not a fan of rap/pop/hard-rock, but...
Not (necessarily) my kind/sort of music, but...
I don't normally listen to X, but...

You can say, "This type of music is not my cup of tea, but this song is great." It's an idiom.
