I know this is correct but is it correct if from is used instead of off ?

i f not then what sense t he sentence will make if we say_

The cat jumped from the chair.

I read in children's rhymes _ Off to school ___ where it means going to the school.

Yes, you can say, "The cat jumped from the chair", but 'off' is more common.
