You told me that we can use "I was off school for two days" or "I was off sick". Can also say these for other places like gym, office etc? Like "I was sick so I was off gym for two days" or "I was off so k and couldn't go to the gym".

No. Don't use "off gym". I can't think of anything other than "off work" and "off school" that work. Bear in mind that just saying "off school/work" don't indicate that you're ill. You'd have to add more information.

I was off work for three days last week. (There is no indication of why you weren't there.)
I was off sick from work for three days last week. (The reason is clear.)
I was off sick for thee days last week. (As long as your listener knows that you are employed, they'll know you're referring to an absence from work.)

Did you not notice that emsr2d2 put "sick" in quotation marks? You should have done the same.
