1) Once it is post 5:30 AM gyms get crowded.

2) Till 5:30 I have good workout but post 5:30 it gets difficult because of number of people present in the gym.

3) I have good workout till 5:30 but later on it becomes difficult because it guys crowded.

Is it correct to say "past 5:30" or "post 5:30"?

I've never heard of "post" being used that way. I would stick with "past 5:30" or "after 5:30".

I workout properly in the morning but past 5:30 it gets difficult to carry on the same way. Is it correct?

I can't say why, but I wouldn't use "past" there. I would say "after 5:30".

I would use "post" with the time only when used as an adjective.

The post-5.30pm crowd make the gym so busy that I can't enjoy my workout.

@tufguy, please note that you need the verb ‘work out’; ‘workout’ is the noun form.

I'm trying to work out what "work out properly" means. 🤔

1) Once it is post After 5:30am, AM gyms get crowded.

2) Till 5:30, I can have a good workout but post after 5:30 it gets more difficult because of the number of people present in the gym.

3) I can have a good workout till 5:30 but later on it becomes difficult because it guys gets crowded.
I've done what I can with your sentences without changing them too much. However, I don't find #2 or #3 likely/natural.
