This is from an article about content marketing. Why does the author use the word "tofu"?

I don't know exactly, maybe it's a useless remark, but my dictionary ABBYY Lingvo says that tofu is a soft white substance made from mashed soya beans, used chiefly in Asian and vegetarian cookery. Maybe someone from Japan could explain it to us.

It's obviously a metaphor, but I don't know for what.

Perhaps it's "no meat" - when you talk about "meat" you mean solid, useful issues, the heart of the matter. But it's an obscure reference, to be sure.
 
You must be right, but I lived content marketing for years and never once came across "ToFu" this way. Glad you found it.
