The author says "sent hundreds of animals to U.S. labs" rather than "sent hundreds of the animals to U.S. labs." So I guess that the animals in "sent hundreds of animals to U.S. labs" include but not limitted to chinchillas. Am I correct?

I think you are right. They sent chinchillas to those labs, but also other animals.
 
It's ambiguous, and if there were no context, I would have guessed that your interpretation was correct.

However, in the following paragraph, we discover that one of the two suppliers is called Moulton Chinchilla Ranch. I doubt they're going to be supplying chimpanzees.
