sent or had sent?

Teacher, should I use past or past perfect tense in this sentence? Thank you.

1) I just received a call from the insurance company saying that they received the documents that we sent.

2) I just received a call from the insurance company saying that they received the document that we had sent.

2) I just received a call from the insurance company saying that they received the document that we had sent.

I'd say it like this:
"I've just received a call from the insurance company saying that they have received the documents we sent."
