Man: How many turkeys do u have?
Farmer: 100.000
Man: How do you count that high? Take both shoes off? (he laughs)

I can't get what "taking shoes off" has anything to do with counting? Where is the humour?

What counting has to do with takeing shoes off? I can't get the humour.

He is counting his toes - one toe, one turkey; two toes, two turkeys, etc. The humor is that a person only has 10 toes, not 100,000. People who cannot count sometimes count on their fingers, when they run out of fingers they can count their toes.

Sadly, these days, if you asked most small children to add seven to five, they would grab a calculator! ;-)
 
I still don't get the joke.
Here's one that I think is at least slightly funny:

Mainland Aussie: How many sheep do you have?
Tasmanian: 24
Mainlander: How do you count that high? Take off your shoes?

The joke is that Tasmanians are inbred, and likely to have more than 20 fingers and toes. Making it 100,000 seems to be pointless.
(Note: it's a joke, not necessarily factual. You can adapt the joke to suit your region, as long as political correctness allows).
