What does the bolded mean in the passages?
 
Here I'd take it simply to mean that they were not very experienced. It's not really saying they lacked talent or originality, I don't think.
 
Webster defines it as someone who's experienced and reliable, as opposed to someone's who's flashy or particularly brilliant. Talented, perhaps, but essentially background figures whose playing carry the show while the headliner wows the crowd.

In the traditional trades or blue-collar occupations (for example plumbers and electricians) there are three levels of experience-acquired skill: apprentice, journeyman, and master.
