2015 to date
2015 to present

I would love to say that I have been working here (2015 to this day). What is the correct word choice here?

from 2015 to date

You can also say "I have been working here since 2015."

What's the context? I would use to date on a job application, but not in general conversation.

Hi Tdol;

The context is an academic CV.

It's fine for that.
