i'll ask something about gerunds:

to make a succesful soufflé requires expert timing

or

making a succesful soufflé requires expert timing

i think it may be first because 'purpose' but i dont know

The part of the sentence before "requires" is the subject of the sentence. Gerunds function as nouns, so they are very suitable for starting sentences like the above.
