I didn't try to get to my feet, just squatted and uncoiled from the thighs on down. I flew over the rolling gold like Superman and landed on top of him.

What does "uncoiled from the thighs on down" mean?

Does “thighs on down” mean the thighs are at low position?

No. It means that he engaged his leg muscles, starting with the thigh muscles then the lower leg muscles. The result was him jumping and "flying over the rolling gold etc".
