What does "we all have our work cut out for us to top those two" mean?
It seems to mean "we did our best to beat the two". but the tense is different.
 
Do you know what it means when we say "to have one's work cut out ..."? Have you looked it up online?
What definition of "to top" can you find that might work there?
 
It means be faced with a hard or lengthy task.
So my guess seems close.
 
Yes, that's right. It means that it will be very difficult for us to beat (top) the 372 and 442 different observations that those two users logged last year.
 
They set a standard that will be hard to beat.
