Supposing the sentence: "My father, my sister and I went fishing". Would it be right to say "we three went fishing" ?

"The three of us..." would be the natural way.

"We three" is normally only followed by "kings of orient are"

I don't have any problem with "We three went fishing". I have no problem with Dave's suggestion either.
