What does it mean when you say:

You're probably the prettiest girl I'll ever meet in my life. (Does this mean I haven't met the girl yet?)

VS

You're the prettiest girl I've ever met in my life.

What's the difference here?

It means you have met the girl and you don't expect to ever meet anyone prettier in the whole of the remainder of your life.

The first means ever. Until now, and no expectations of meeting one prettier.
The second means until now. Maybe someone prettier will come along in the future.
