The central joke in this episode is that Monica has found a new date (Alan) that everybody likes for a change. In fact, he seems to be perfect in every way.

In this scene, much to Monica's amazement, the friends are all singing Alan's praises. The laugh here is how the compliments have gone a bit over the top.
