I think the participle “going” could be omitted. What do you say?

Possibly, but 'over land' should be one word and they'd go over mountains – not through them.

I have to disagree with @Rover_KE somewhat. (Mark your calendars!) I think you can say you went through mountains if you went through a valley that passes between mountains.
