Is it correct to say short sleeps?
 
No. Do you mean "naps"?
 
I have never heard of somebody "sweet sleeping". I have no idea what it is supposed to mean.

Perhaps you mean sleeping soundly.

How should I name the 's'? For the third-person singlar simple present verb?

The "s" is just the third person singular present tense ending. That tense "takes an 's' at the end of regular verbs". You don't need to "name" the 's'.
