A value is a way of being or believing that we hold most important. Living into our values means that we do more than profess our values, we practice them. We walk our talk— we are clear about what we believe and hold important, and we take care that our intentions, words, thoughts, and behaviors align with those beliefs.

(Quoted from the book Dare to Lead by Brené Brown)

I am not really understand the blue part. I take it to mean:

A value is a way of being or believing the thing(s) (= "that" in the original sentence) (which) we hold most important.

Am I right?

No. Let me paraphrase:

A value is a way of being or believing which we consider to be most important.

Thank you, jutfrank. :)

A value is a way of being or believing that we hold most important.

So in this sentence "that" refers to "being or believing", and "we hold the being or believing most important".

Am I right?

No, not exactly.

that refers to the noun phrase a way of being or believing, the head of which is way.

(I should point out that I've removed the comma in post #2, which was wrong since the relative clause is defining.)

I would say:

A value is a belief that's important to us; it's an idea or belief that we hold dear. Living our values means that we do more than profess them; we practice them.

Where do you find that stuff?

I saw it on a friend's Facebook page. She encouraged us with that when the new year began. :)

I think values are principles that one lives by, and puts to practice in life.
