Would it sound OK to say something like "Two companies have been working in combination to get a new product to the market."? Or perhaps something like "They launched a new product in combination with another company."?

This usage of "in combination" has a 19th-century feel about it in my opinion and is inappropriate in your sentences.

The word "together" would be fine in both those examples, instead of "in combination".
