What is the menaing of "fresh off the bird"?

It means that the meat is fresh- the animal was slaughtered very recently.

yes, that's my question. I mean this has nothing to do with turkeys. I got that he says "I like turkeys coz their meat is fresh" so any other bird can has fresh meat if slaughtered recently as you kindly said. That why I thought it has another meaning, like something specified to turkeys. :shock:

I don't know why he said it- maybe he lives in an area where they keep turkeys.

I think it's just a matter of how the meat is kept. Shops sell, for example, 'turkey breast', 'turkey meat', turkey mince', 'turkey slices' and so on (not to mention all the reconstituted meat products masquerading as 'fresh meat'). This speaker prefers to buy (or raise) the whole bird, and cut the meat from the whole carcase.
