[Grammar] Humans or a human

Can I say: "humans" or " a human" takes oxygen and releases co2? Is it plural or singualar?
 
Inhale/breathe in might work better than takes, and you would have to adjust the verb for sinngular or plural, but both forms are possible.
 
As you are making a broad generalisation, I suggest you use the plural humans.

Humans breathe oxygen.

If you wanted/needed to use the singular, use "a human".
 
We write "CO2", not "co2".
 
There generally has to be a good reason for saying 'humans'.

Normally we say 'people'.
 
I think that explaining physiology, especially comparative, is a good reason.
"Humans breathe oxygen into their lungs; fish have gills."
"Humans and other mammals take in oxygen; plants give off oxygen."
